Pistachio Bites (Gluten Free)

After a whole week of my intense dark chocolate and amaretto cake, I was in need of something lighter to satisfy me after dinner. These pistachio bites are very light, with a strong pistachio flavor. Not to mention they’re pretty healthy too and full of protein!


I got carried away taking pictures of them, sorry!



150g pistachios
140g ground almonds
70g caster sugar
2 egg whites
few drops of green food coloring
1 teaspoon vanilla extract

1. Oven 160C/Gas 3. Put 90g of the pistachios and all of the ground almonds into a blender/food processor. Blend them both until fine, then transfer to a bowl. In a separate bowl whisk up the egg whites with the sugar for a few minutes.

2. Now add the dry ingredients to the wet and use a spoon to mix it all together. Add the vanilla and food coloring, and give it a final good mix. If the mixture is still too sticky then add some more ground almonds or pistachios.


3. Coarsely blend the rest of the pistachios (not too much) leaving big chunks.Then take spoonfuls of the mixture and shape into balls, roll them into the coarsely grounded pistachios, then transfer them on to some greaseproof paper (the mixture will be quite sticky in the hands, so you have to be quick when rolling them)

4. Once the tray is full then press own on each ball to flatten them slightly. Cook for about 10/15 minutes.


(Tips: They’re great with tea or coffee! Also if you wish, try adding 2 teaspoons of rose water, the combination of flavors works really well!)
